Mudurnu Basma Helvası

Mudurnu Basma Helvası is a traditional flour-based dessert from Mudurnu district in Bolu province, Türkiye, listed as a Protected Geographical Indication under Industrial Property Law No. 6769. Registered on December 23, 2020, by the Mudurnu District Governorate, it is a culturally significant dish in Mudurnu’s culinary tradition.

Mudurnu Basma Helvası is made by roasting special-purpose wheat flour in sunflower oil, then combining it with a syrup of sugar, water, and egg. It is served with walnuts sprinkled on top. The use of egg in the syrup is a key distinguishing feature, contributing to the dessert’s unique color, flavor, and texture. Historically, clarified butter and cream were used instead of sunflower oil, reflecting the region’s traditional practices.

Ingredients:

• Special-purpose wheat flour
• Drinking water
• White granulated sugar
• Sunflower oil
• Egg
• Shelled walnuts

Preparation Steps:

1. Sunflower oil is heated in a suitable pan.
2. Wheat flour is added and roasted on low heat for 15–20 minutes with continuous stirring until it turns brown.
3. In a separate container, a syrup is prepared with sugar, egg, and water.
4. The syrup is added to the roasted flour-oil mixture and stirred for an additional 8–10 minutes.
5. The mixture is removed from heat when it no longer sticks to a wooden spoon and is rested for about 10 minutes.
6. The helva is shaped into ovals with a spoon, placed on plates, and garnished with shelled walnuts for serving.

Production Requirement: All stages must occur within Mudurnu district.

As a Protected Geographical Indication, the product or its packaging must bear the “Mudurnu Basma Helvası” designation and the Protected Geographical Indication logo. If this is not feasible, the designation and logo must be prominently displayed at the place of business.

Inspections are coordinated by the Mudurnu District Governorate, conducted by a committee of at least three members, including representatives from the Mudurnu District Governorate, Mudurnu District Directorate of Agriculture and Forestry, Mudurnu Municipality, and Mudurnu Public Education Directorate. Inspections occur at least annually, with additional checks as needed or upon complaints. They verify ingredient compliance, adherence to the production method, and proper use of the Protected Geographical Indication. Non-compliance is reported to relevant parties, and inspection reports are submitted annually to the Turkish Patent and Trademark Office.
