Designation of Origin

Gaziantep Arap Köftesi is a traditional dish of Gaziantep cuisine, prepared by kneading fine bulgur (simit) and lean minced meat, shaping them into hazelnut-sized balls, boiling them, and then frying them in clarified butter (sadeyağ). Protected under the Mahreç Sign as per Law No. 6769 on Industrial Property, this dish was registered on October 19, 2021, and its production is restricted to the geographical boundaries of Gaziantep province. The registration application was made by the Gaziantep Development Foundation, and the dish’s reputation is directly linked to its region-specific production technique.

The dish is made with fine bulgur, lean beef or lamb mince, spices, and onion, with the shaped köftes first boiled and then fried in clarified butter. Optionally, it can be served with garlic yogurt, chopped parsley, or tomato paste. When served with a garlic yogurt sauce mixed with greens such as parsley, purslane, or chard, it is called “Cacıklı Gaziantep Arap Köftesi.”

The distinctive feature of Gaziantep Arap Köftesi lies in its unique cooking technique specific to Gaziantep. The process of boiling the köftes before frying them in clarified butter results in a characteristic flavor and texture, combining a crispy exterior with a soft interior. This method, deeply rooted in Gaziantep’s culinary tradition, is documented in various cookbooks and academic publications.

Preparation Method

The core ingredients for Gaziantep Arap Köftesi include lean lamb or beef mince, fine bulgur (simit), onion, salt, black pepper, red pepper, and clarified butter for frying. Optional ingredients include garlic, parsley, and tomato or red pepper paste. For the cacıklı version, greens such as parsley, purslane, or chard leaves are used along with garlic and strained yogurt.

The preparation begins by kneading the bulgur with spices and grated onion, gradually adding warm water to soften the bulgur. Lean minced meat is then incorporated, and the mixture is kneaded until it forms a cohesive, non-separating dough. This dough is shaped into hazelnut-sized köftes.

The köftes are boiled in salted water over an open flame. Once cooked, they are drained using a strainer and then fried in clarified butter, which gives them a distinctive crispiness on the outside while maintaining a balanced softness inside.

For serving, the köftes can be topped with garlic yogurt, chopped parsley, or tomato paste, depending on preference. For the cacıklı version, a mixture of chopped greens, garlic, and strained yogurt is prepared and served alongside, adding a refreshing flavor and visual variety to the dish.

Geographical Boundary and Production Conditions

The production of Gaziantep Arap Köftesi, which requires skilled local techniques, is restricted to the boundaries of Gaziantep province. This geographical limitation ensures the preservation of the dish’s authenticity and cultural value.

Inspection Mechanism

The production and use of the geographical indication are overseen by a supervisory body coordinated by the Gaziantep Development Foundation, comprising representatives from the Gaziantep Provincial Directorate of Agriculture and Forestry, Gaziantep Metropolitan Municipality, and the Gaziantep Union of Craftsmen and Artisans. Inspections are conducted at least once a year, with additional checks performed in response to complaints or suspicions. Expert support from public or private institutions may be sought during the inspection process.
