Sura Meal

Sura is a traditional meat dish from Türkiye’s Aegean Region, in which small ruminant meat is stuffed with rice-based pilaf and then cooked. In regional culinary classifications, sura is categorized among types of kaburga dolması and exemplifies the widespread Anatolian technique of meat preparation through stuffing.

Sura is a dish prepared by opening the rib section of lamb or goat, stuffing the cavity with a rice-based mixture, and then sealing the meat before cooking. The preparation method relies on the principle that the stuffing cooks inside the meat itself. In this regard, sura belongs to the category of dishes in which both meat and cereal components are unified through a single cooking process.

The primary ingredient of the dish is typically the rib section of small ruminants. The rib bone is carefully opened while preserving the surrounding meat tissue to create a cavity suitable for stuffing. The filling usually consists of rice, dried onion, raisins, pine nuts, and spices. After the mixture is placed inside the rib cavity, the meat is sewn shut using thread and needle. Traditionally, sura is cooked in an oven or over a closed fire.

The dish sura is found in the Aegean Region, particularly around Manisa, Aydın and Denizli, where similar methods are used to prepare stuffed ribs. Although the composition of the filling and cooking duration may vary regionally, the fundamental preparation principle remains consistent.

In regional sources, sura is commonly associated with Eid al-Adha and communal meal events. Due to the time and labor required for its preparation, sura is regarded not as an individual dish but as one produced within a context of collective consumption. This characteristic highlights the dish’s connection to social practices of sharing and communal gathering.
