Mesudiye dry bread, also known as “Mesudiye goliti,” is a traditional bakery product unique to the Mesudiye district of Ordu province, Türkiye. Registered with a geographical indication sign of origin under the Industrial Property Law No. 6769, it was officially protected on November 21, 2022.   • 500 g salt

The dough is kneaded by hand or machine for 25 minutes and left to ferment for 15–20 minutes. It is then divided into 300 g portions, rested for 10 minutes, and shaped into rings by hand. The bread undergoes a three-stage baking process in a stone oven at 170°C: first baking (15 minutes), second baking (15 minutes), and tempering (15 minutes). Finally, the bread is dried at 50°C for 4–5 hours. Cooling takes 30–60 minutes.

Packaging and Shelf Life

The product is packaged in airtight, food-safe containers in 1–2 kg packages. When stored in a cool, dry environment, its shelf life is 3–5 years.

Mesudiye dry bread holds a significant place in the region’s culinary culture. Its reputation is directly tied to its geographical origin, requiring all production stages to occur within the Mesudiye district.

Inspection Process

Inspections are coordinated by the Ordu Metropolitan Municipality, with participation from experts of the Mesudiye Municipality and the Ordu Provincial Directorate of Agriculture and Forestry. Conducted at least once a year, inspections verify ingredient compliance, adherence to the production method, and proper use of the sign of origin. Non-compliance and necessary measures are reported to relevant individuals or entities. Inspection reports are submitted to the Turkish Patent and Trademark Office.
