Shambaba ([Şambaba](/en/detay/sambali-27494/llms.txt)) is a syrup-soaked dessert made with a yeast-based dough that is allowed to rise before baking. It is commonly found in pastry shops during Ramadan, though it is not widely known. The dough is prepared using fresh yeast, flour, milk, eggs, and butter, then left to rise in small cake molds before baking. Once baked, the pastries are soaked in a syrup made from sugar, water, and lemon juice, allowing them to soften and absorb the sweet flavors. ### **Recipe**

#### **Ingredients:**

- **For the Dough:**
    - 10 g fresh yeast
    - 1 tea glass of warm milk
    - 2 cups of flour
    - 2 eggs
    - 1 tea glass of granulated sugar
    - 1 packet of vanilla
    - 1 teaspoon of salt
    - 50 g melted butter
- **For the Syrup:**
    - 2 cups of granulated sugar
    - 2 cups of water
    - Juice of half a lemon
- **For Topping (Optional):**
    - Apricot marmalade, cream, fresh strawberries, pistachios

#### **Instructions:**

1. Dissolve the yeast in warm milk and let it sit for 10 minutes.
2. Whisk the eggs with sugar, then add vanilla, salt, and melted butter.
3. Combine this mixture with the yeast and flour, kneading into a soft dough.
4. Divide the dough into molds, cover, and let it rise in a warm place.
5. Bake at 200°C (392°F) for 30 minutes.
6. Prepare the syrup by boiling sugar, water, and lemon juice.
7. Soak the baked pastries in the syrup until fully absorbed.
8. Once cooled, garnish with marmalade, cream, or pistachios before serving.
