## Article Content

[Bozdoğan pide](/en/detay/bozdogan-pide-7368a/llms.txt) is a traditional bakery product produced in the Bozdoğan district of Aydın province, Türkiye, and is registered as a “Mahreç İşareti” (Protected Geographical Indication) geographical indication under Law No. 6769 on Industrial Property. The product was registered on October 23, 2024. The registration application was submitted by the [Nazilli](/en/detay/nazilli-pide-f89c7/llms.txt) Chamber of Commerce, establishing a geographical and reputational link due to Bozdoğan’s deep-rooted culinary culture.

### **Description and Varieties**

Bozdoğan pide is made by combining dough prepared from white wheat flour, water, yeast, and salt with a filling, and baking it in a stone-bottomed wood-fired oven. It is produced in four main varieties, based on filling and shape:

- **Egg and Cheese Pide:** Filled with sheep’s cheese, egg, and parsley. During serving, buffalo clotted cream is added, and optionally orange or lemon juice. Edge thickness is approximately 1–1.5 cm.
- **Minced Meat Pide:** Filled with low-fat ground beef, tomato, onion, parsley, and salt. Butter is used during serving; orange or lemon juice may be added. Edge thickness is approximately 1–1.5 cm.
- **Round Minced Meat Pide:** Made with the same minced meat filling, shaped into a circle approximately 15 cm in diameter.
- **Tahin Pide:** Dough is kneaded with tahini, white granulated sugar, and butter. Diameter is approximately 30 cm, thickness about 0.5 cm. Buffalo clotted cream is used when serving.

### **Production Features**

Only white wheat flour is used in the preparation of Bozdoğan pide. Dough is kneaded by hand with water, salt, and yeast, then rested in a cool environment for at least one hour. Dough balls of approximately 150 g each are stored in wooden containers. Dough is prepared daily, and no machinery is used. The baker rolls out the dough by hand, tapping and twirling it in the air, a process that carries both technical and ritual significance.

Fillings are prepared by finely chopping the ingredients and mixing them for about three minutes. Pides are placed in the oven using a wooden peel and baked for 3–6 minutes, depending on oven temperature. Local ingredients such as buffalo clotted cream, orange, or lemon juice are used during serving.

### **Geographical Link and Supervision**

Buffalo clotted cream used in Bozdoğan pide is sourced from within the designated geographical area. All production stages are carried out within the boundaries of Bozdoğan district. Supervision is coordinated by the Nazilli Chamber of Commerce, with participation from experts from the Bozdoğan District Directorate of Agriculture and Forestry and Bozdoğan Vocational School’s Veterinary Department, conducted at least once a year. Inspections focus on ingredient compliance, adherence to production methods, and proper use of the Protected Geographical Indication.
