## Article Content

**Bayburt süt böreği** is a traditional baked dessert unique to the Bayburt region, prepared by layering thinly rolled dough sheets and sweetening them with a milk-based syrup. The use of roasted hazelnuts between the layers and the soft, aromatic texture achieved through the milk syrup poured on top are features that distinguish this pastry from others. ### **Ingredients**

According to the registration certificate of Bayburt süt böreği, the traditional ingredients used are as follows:

#### **For the dough**:

• 2 tea glasses of butter

• 1 egg

• 1 cup of milk

• 500 g flour

#### **For rolling the pastry sheets**:

• 100 g wheat starch

#### **Filling**:

• 300 g roasted hazelnuts

#### **For the syrup**:

• 3 cups of milk

• 3 cups of granulated sugar

#### **For frying**:

• 300 g butter

• 200 ml vegetable oil

It is a registration requirement that the milk and butter used come from cattle raised within the borders of Bayburt province.

### **Preparation Steps**

**1. Dough preparation:** Mix the egg, milk, and butter and knead; then add the flour to obtain a soft and homogeneous dough. Knead for approximately 10–15 minutes and let it rest for 20–25 minutes.

**2. Rolling the pastry sheets:** Divide the rested dough into 15 portions. Sprinkle each portion with starch and roll into pastry sheets 40–45 cm in diameter and 0.13–0.15 mm thick.

**3. Layering and filling:** Place the pastry sheets on a greased baking tray, sprinkling roasted hazelnuts between each layer. After all layers are arranged, slice the pastry and pour melted butter on top.

**4. Baking:** Bake in a preheated 180°C oven for approximately 20–25 minutes until the top is lightly browned.

**5. Syrup preparation:** Boil the sugar and milk together to prepare the syrup. Pour the slightly cooled syrup over the pastry fresh from the oven. After the pastry absorbs the syrup and excess oil is drained, it is ready to serve.

### **Geographical Indication Registration**

Bayburt süt böreği was registered as a geographical indication by the Türk Patent ve Marka Kurumu on January 11, 2021, with registration number 647. The registration was made by the Municipality of Bayburt, and the product is classified as a “Mahreç İşareti” (Origin Mark). It is mandatory that all ingredients and the production process be carried out within the borders of Bayburt province.

The certificate clearly specifies the product’s description, production method, distinctive characteristics, and inspection criteria. Additionally, the use of additives is prohibited, and preference for natural dairy products is required.
